Chocolate Muffins

I am in a middle of a move here. We are closing on our old house in a few days and signing papers for the new house right after that. If all goes well that is. The amount of stress this whole process required is unreal. If I had known at the beginning how hard this was going to be, I would think long and hard before doing it again. It took us seven months to sell our house. Our new one was supposed to take 3 months to build and we started the process at the same time. Was it luck or a nice agent that prolonged the building process, I don’t know, but somehow all is coming together now at the right moment. It is so sad and so great at the same time. Not everyone feels like this when moving I assume, my husband isn’t terribly sad to leave this house, or maybe he is just being the strong one. But I had both of my kiddos in this place, we remodeled it bottom up all on our own and I still love it soooo much. We just kind of outgrown it. Boys needed their own rooms, and I wanted them to grow up in a little nicer area where we just might have some kids on the street. And guess what! We went to the new house yesterday to drop off something, and we meet the neighbors across the street, and we are so so happy, they seem very nice and have a boy that is Mika’s age. It is so exciting and helps me thing that we are doing the right thing! I just need to survive this following week somehow. The amount of things that we accumulated is totally ridiculous, and that is after I gave away/sold/threw away almost half of our things. I might be a borderline hoarder, but I hide it well. Or I should say I hid it well until right about now. Hello internet, I’m a hoarder, don’t let me go to West Wlm EVER AGAIN. Or World Market, Anthropologie, Target or just turn of my internet entirely. That would be good.
Home Depot as well.

To say that in all of this I’ve been struggling to eat healthy and last month we just completely fell apart, is little.
We ate take out, pizza and even fast food, something I thought we successfully stopped doing, at least four times this past week. I don’t even wanna know what next two weeks are going to look like. There will be a lot of frozen burritos going on, and my attempt to relieve stress is baking. There was a lot of muffins around here lately, but actually finding the camera and everything to snap pictures….was not so easy.
I did snap a few pictures of these muffins though, so here is a quick and easy chocolate muffin recipe. That is breakfast and I am planning on homemade tomato soup and grilled cheese for lunch/dinner. I have to spend my stash of tomatoes I canned and clean out the freezer and fridge. I see a lot of stir fry in the very near future as well 😀

Chocolate Muffins

1 cup buttermilk (or sour cream little thinned with milk)
half cup melted butter
1 egg
1 + 3/4 of cup all purpose flour
3/4 of cup sugar
1/2 cup cocoa powder
1 teaspoon baking soda
1 teaspoon vanilla shot (or extract)
1/4 teaspoon salt
1/2 cup chocolate chips (milk and bitter) (3/4 cup mixed chips)
(1 tsp of espresso powder)

Preheat the oven for about 15 min at 190 C/375 F degrees. Butter the muffin pan. In a bowl mix together the dry ingredients and mix it with your hands.

In another bowl beat the egg and then add the buttermilk a bit at a time.

Add the butter. Mix it well until combined and then mix the dry ingredients with the wet ingredients using a spoon or a spatula. Don’t over mix it, it is ok to stay a little lumpy.
Fill the muffin pan with the mixture and for 15-20 min. Check with a toothpick after 15 min
Wait 5 min before you try to take them off the pan.
