Chicken and Nectarine, Arugula Salad

I have to say this is one beautiful salad. I eat a salad almost every day, but my salads are often almost the same, rarely do I put this much effort in it. I meal prep a lot and my salads come together in less than five minutes during the week and are usually my lunch, this I made recently for our dinner and both the hubby and I were so happy with it! It has a delicious peach and habanero BBQ glazed chicken, nectarines, tomatoes, red onions, cucumbers, Cotija cheese, avocado, grilled corn, arugula, romaine and it is all topped with a delicious summery basil vinaigrette. You cannot go wrong with this one, it would be great for entertaining too!

  • Chop the Romaine lettuce and mix with arugula, arranging it on the bottom of your salad bowl or platter.
Slice the nectarines, tomatoes, onions, avocado and the Persian cucumbers. Crumble the Cotija Cheese. Arrange on top of the arugula and Romaine.
  • Slice the chicken and top the salad with it. Finish off with the basil vinaigrette.

For the Basil Vinaigrette

  • Add all of the ingredients into the blender or food processor and pulse, if needed add a tablespoon or two of water or a little more olive oil to get the desired thickness.
